lasagna 2

I haven't posted so much here recently, maybe I enjoy cooking more for other people and since no-one is here at the moment :( , maybe I am feeling a little less inspired - less energético maybe...  However, I can still formulate ideas for when they return :) 

I had a very strange dream last night.  Amongst other things, I went out for a meal with Loren Cordain.  Loren Cordain despite being a great proponente of the paleo diet and having written several books and papers on the subject, can't stand the food himself (in the dream).  If I remember correctly he ordered a cheese burger with chips and then went to great lengths stating that actually all this paleo thing was all "a bunch of bullshit"...  well, those were the words of the great man himself...  Interestingly, it has always made me wonder, despite Art de Vany (72), Mark Sissons (mid-fifties, primal), Erwan le Corre (forty-ish, Weston A Price), even Jack Lalanne (96, not exactly paleo mind) all of them being in great shape, for their respective ages, the man himself doesn't seem to be - Loren Cordain; maybe I am being mean....

Chesnuts are a very common alpine substitute for wheat..
So chestnuts fried in tocino fat, with onion and ox meat.
Over this apple with blue cheese and parnesan cheese, this was fantastic...
